Ingredients:
| 4 4-6-oz. | fresh boneless, skinless chicken breasts |
| 1/2 tsp. | salt |
| 1/4 tsp. | ground black pepper |
| 1 tbsp. | brown mustard |
| 1 tbsp. | molasses |
| 1 tbsp. | olive oil |
| 2 tsp. | lemon juice |
| 1 tsp. | dried thyme |
Directions:
Season chicken with salt and pepper to taste. In a small bowl combine mustard, molasses, olive oil, lemon juice and thyme; whisk well. Coat chicken breasts in mustard mixture and let marinate, refrigerated, for 1 hour.
Preheat broiler.
Place chicken on shallow broiler pan coated with vegetable cooking spray. Cook about 5 inches from heat until golden and thoroughly cooked, about 5 minutes per side. Serve warm.
