Pirogi

Ingredients:
6.5 - 7  cups  flour
1.5  tsp.  salt
egg yolks
6.5  cups  water
1  tbsp.  oil or butter

Directions:
Place 6 1/2 cups of the flour in a large bowl and make a well in the center of the flour. Place the eggs, oil and salt in the well and then gradually work the flour into rest of the ingredients, adding the water a little bit at a time until a dough forms. If the dough seems too sticky, you can add up to additional 1/2 cup of flour.

On a floured surface, knead dough until smooth. Roll out dough to 1/8 inch thick. Cut into 3-inch circles.

You can use whatever filling you would like.

Cheese: Crumble 1/4 lbs. feta cheese and place in center of pirogi dough circles.

Meat: Saute ground meat with onions and add spices to please (i.e. salt, pepper, oregano, italian spices, dried parsley -- the more the merrier). Add to pirogi

Cooking instructions: Pirogi can be boiled, sauteed (deep-fried if you prefer the unhealthy version) or baked.

Serve plain or over yogurt or sour creme.
