Ingredients:
| 4 6-oz | lamb chops |
| 2 tbsp. | olive oil |
| 1/2 tsp. | salt, divided |
| 1/4 tsp. | ground black pepper, divided |
| 8 ounces | low-fat plain yogurt |
| 1 | lemon, juiced |
| 1 tbsp. | chopped fresh mint |
| 1/4 tsp. | paprika |
Directions:
Preheat broiler.
Brush lamb chops on both sides with olive oil and season with half the salt and half the pepper; place on a broiler pan. Broil for about 4 minutes per side for medium-rare.
Meanwhile mix together remaining salt and pepper, yogurt, lemon juice, mint and paprika; blend well.
Serve lamb chops drizzled with yogurt sauce.
Cooking Tips: Also good grilled.
