Ingredients:
| 2 Lbs | Seabass or Halibut |
| 2 Bottles | Apricot or Other Summer Wheat Beer |
| 1.5 tsb | Olive Oil |
| 2.5 tsb | Butter |
| 3 cloves | crushed garlic |
| 1 good shake | pepper and salt |
| 1 pinch | ginger |
Directions:
Dry the sea bass and shake salt and pepper over it. Put olive oil into frying pan and turn on high heat.
Sear each side (1 minute each side or so)of the fish in sizzling frying pan then turn to a medium heat.
Drink one of the beers.
Add in crushed garlic, ginger, and butter and a half cup of the apricot wheat beer, cook roughly 3-5 minutes each side using a spoon to ladle the mix over the face up side.
Pour out as much liquid as possible and resear the top and bottom of fish if need be.
The fish should be wet but flaky when done and will taste like summer. If you like, you can put the liquid strained out in the last step in a small pan with fresh corn and sizzle the corn into the liquid, makes a glaze than can be added to the top of the fish.
